Abyssenia, now modern day Ethiopia, is considered the place where coffee originated. Based on ancient Ethiopian history, the story goes something like this… Around the year 850, there was a goatherd by the name of Kaldi. It is said that he is the one responsible for discovering the now infamous plant and introducing it to Abyssenian culture.
Coffee was introduced to the trade world in 1454 when the Mufti of Aden visited Ethiopia and sampled the beverage. Claiming that the drink had cured him of some affliction, his approval carried so much weight amongst his men that soon word of mouth spread like wildfire- with these men introducing coffee to ports in Yemen and Mecca- and coffee was soon on the menu everywhere. Sakicha Village is located in the Guji Region with an altitude of 2050 to 2200 meters. Because Sakicha sits in a higher altitude, its cherries go through a slower maturation level and this results into a more intense flavor profile of this coffee.
Sakicha Kebele is geographically classified as Guji, but it is sitting on the mountain slope that very close to Gedeb.Farmers in Sakicha are in general younger and more educated for coffee farming, From what we have seen, coffee trees are better pruned, cherries are ripening at the same time, and farmers pick better cherry, All these factors determine the quality of the final cup however they are often to be overlooked.
The drying time of the coffee takes place for 20 days, because of the long drying rate, it adds up to the consistency and cleanness of the coffee's flavor and improves its texture to a softer and a more delicate mouthfeel.
